Super Soup To Get You Spring Ready!

 

If you like soups you are going to LOVE this recipe taken from my Drop Zone Diet book. It will help you to lose weight, look fantastic and get super healthy all at the same time. 

 

Tomatoes are high in powerful anti-oxidants to help combat free radicals and therefore help to reduce the risk of disease, and also slow down the ageing process. Perfect! 

 

 

Tomato, chilli & adzuki bean soup

A hint of chilli makes this nutritious, colourful soup even more warming and filling. The adzuki beans offer a good boost of protein, while the tomatoes are ready to work their antioxidant magic!

225g onion, peeled and sliced
100g leeks (whites only), sliced
60g celery, chopped
3 cloves garlic, peeled and crushed 50g carrots, peeled and thinly sliced 1⁄2–1 medium red chilli (to taste)

6 tablespoons tomato puree
400g fresh tomatoes, each tomato cut into 8 pieces 375ml water
200g tinned adzuki beans, drained
3–4 teaspoons red wine vinegar
1–2 teaspoons Manuka honey
sea salt and ground white pepper (to taste)
2 teaspoons chopped fresh coriander, to serve

In a large, heavy-bottomed saucepan, combine the onion, leek, celery, garlic, carrots and chilli with tomato puree over a low heat and briefly allow the vegetables to soften slightly. Stir in the tomatoes and cover with the water. Add the adzuki beans, reserving a few to add as a garnish, then cover and simmer for 30 minutes, stirring occasionally. Allow the soup to cool a little and then, in batches, liquidize until smooth. As you are blending, add the red wine vinegar, honey and seasoning. Serve a 200ml portion with a scattering of fresh coriander and the reserved adzuki beans.

Refrigerate or freeze the remainder in 200ml servings.
